 胡萝卜素、维生素B1、维生素B2、维生素C、粗纤维以及蛋白质、脂肪、钙、磷、铁等。

 1、快菜营养丰富,除含糖类、脂肪、蛋白质、粗纤维、钙、磷、铁、胡萝卜素、硫胺素、尼克酸外,尚含丰富的维生素,其维生素C、核黄素的含量比苹果、梨分别高5倍、4倍;微量元素锌高于肉类,并含有能抑制亚硝酸胺吸收的钼。

 快菜要现炒现吃不要隔夜;腌制的快菜要洗净盐渍再吃。
